Are you vegan?
Yes I am! I have been vegan for about 15 years. I was vegetarian for a few years, met a vegan, and started researching some more. I had no idea what horrible conditions and treatment dairy cows and egg laying hens went through and once I found out, I became vegan right away. I am, and will always be, vegan for the animals.
Didn’t you own a vegan bakery?
Yes I did! For 8 awesome years I owned X’s to O’s Vegan Bakery in Troy, NY which is just outside of Albany, NY. It was a really awesome adventure. My first blog post is about how I had to close it down and I will probably write different things here and there about that experience.
What do you think about labels?
I think they’re pretty useful to know what’s in your food. OH, wait….that’s not what you meant? I love labels…they’re words that people use to identify themselves. I use a few myself.
What’s your food philosophy?
The way I eat has changed a lot over the years. When I first became vegan I ate a fair amount of processed food like veggie burgers, veggie hot dogs, and more. Slowly I started to eat more fruits and veggies and I actually hated fruit until I became vegan. Now I eat a ton more non-processed foods….foods that come from the land. I still eat some processed food once in awhile but the bulk of what I eat is full of nutrients and awesome energy….a little more whole foods, if that’s what you want to call it. Now that I’m an athlete I do pay more attention to what I eat and do practice “flexible dieting”. Basically I eat pretty healthy, making sure to get all of the nutrients/macros that I need but still plan in some peanut butter cups or brownies whenever I want. It’s very balanced and it makes me happy.
Do you have a mission?
Hell yeah I do! My mission is to show you how to successfully find your inner badass through eating, cooking, living and lifting as a vegan or vegan curious person. I want to help you see how easy it is to eat, cook, and be vegan. Call me that cool “aunt” you go to for recipes, advice, and lifestyle questions. Nothing feels more empowering than feeling like you can tackle any situation that comes at you. You should have the tools to take control of your own life and dive into whatever goal you set for yourself. It’s that simple and I want to help you do it all!
Are any of your recipes allergen friendly?
YES! I myself can’t eat gluten, so there will be several gluten free recipes. I will also include wheaty ones of course but a lot of the innerds to things will be gluten free. I also know a lot about cooking/baking for those with soy, corn, and nut allergies so I will include those as well sometimes OR just shoot me an email and I can try to help you.
